Ixhuatlán del Café is the processing area for the Santuario Project and where this coffee undergoes its unique process. Cherries are collected from various farms throughout this area and delivered to the Santuario processing facilities.
When this coffee is hot expect and overall boozy character with flavours of redcurrant and mixed berries. As it cools more herbal tones of bergamot become evident, along the lines of an earl grey tea.
